James Cash, a longtime wine lover and commercial construction and real estate industry executive, recently founded Revel Custom Wine Cellars in response to his own dissatisfaction with the traditional display systems that most cellars employ, ones in which you can’t see most of the bottles—just corks. Thus Revel creates cellars in which the wine is the focal point instead of the racks. The Revel design uses dowel-bottom sliding drawers and carousels—similar to those found in high-end kitchens—which allow for more efficient airflow between the bottles and, more important, allows you to see more of the bottles and access them more easily. On shelves that are higher than eye-level, you can stock the bottles so that their labels face downward. The company claims that its rack design allows you to see at least 70 percent of a collection from the center of the cellar.
